I love topping it with cilantro, \u00a0homemade cashew cheese, or my homemade vegan habanero mayo, which you can find on my <a rel=\"noreferrer noopener\" href=\"https:\/\/tatyanafigueiredo.com\/tatytable\/2020\/08\/02\/vegan-habanero-mayo\/\" target=\"_blank\"><span class=\"has-inline-color has-pale-pink-color\"><strong>HOW-TO-VIDEOS<\/strong><\/span><\/a>! \ud83d\ude09\ud83d\udc4d\ud83c\udffc\ud83c\udf36 <\/p>\n\n\n\n<p>These dinners are also good for meal prep! You just need to heat it up a few minutes on the broiler. \ud83d\ude4c\ud83c\udffc<\/p>\n\n\n\n<p>\ud83c\uddfa\ud83c\uddf8 Ingredients:<\/p>\n\n\n\n<p>\ud83c\udf60Stuffed Baked Potatoes:<br>(For 4 servings)<br>\ud83c\udf604 medium potatoes (sweet, purple or regular);<br>\ud83c\udf601 can beans (garbanzo, black or any other beans);<br>\ud83c\udf601 small bell pepper, chopped;<br>\ud83c\udf601 small onion, chopped;<br>\ud83c\udf604 clove garlic, minced;<br>\ud83c\udf602 Tbsp avocado oil;<br>\ud83c\udf601 tsp cumin;<br>\ud83c\udf601 tsp chili powder;<br>\ud83c\udf601\/2 tsp paprika;<br>\ud83c\udf60Salt and pepper to taste;<br>\ud83c\udf60Juice of 1 lime;<\/p>\n\n\n\n<p>\u270d\ud83c\udffcSlice each potato vertically and some slices horizontally, but only halfway or you will fully cut it into two pieces. Place the potatoes wrapped in aluminum foil on a baking dish and bake for around one hour or until the potatoes are soft inside. Use a fork to make sure they are soft.<br>\u270d\ud83c\udffcIn the mean time, heat up the oil on medium heat and saut\u00e9 the onion, bell pepper and garlic for couple minutes. Then add the remaining ingredients.<br>\u270d\ud83c\udffcCarefully, open each baked potato and top with the bean mixture.<br>\u270d\ud83c\udffcEnjoy with fresh chopped cilantro on top or any delicious
