Blend all ingredients for the pesto. Add more olive oil if needed. <br>2. Spiralize 4 zucchinis. Add the pesto to the zucchini noodles.<br>3. Optional, spiralize 2 zucchini with 250g of any gluten free pasta like brow rice or quinoa pasta.<br>4. Divide into 4 bowls.<br>5. Garnish with cherry tomatoes, fresh herbs or sprinkle some nutritional yeast for more cheese flavor. <\/p>\n\n\n\n<p>I do it for meal prep.
