tsp baking powder;<br>\ud83c\udf6a 1\/4 tsp pink sea salt;<br>\ud83c\udf6a 1 Tbsp ground ginger;<br>\ud83c\udf6a 1\/2 tsp pumpkin spice;<br>\ud83d\udc49\ud83c\udffd In a medium bowl, mix together all the wet ingredients.<br>\ud83d\udc49\ud83c\udffd Stir in dry ingredients.<br>\ud83d\udc49\ud83c\udffd Roll the dough into your desired gingerbread shape. I even did some as regular shaped cookies with chocolate chips!<br>\ud83d\udc49\ud83c\udffd If the dough is too sticky, add a bit more flour.<br>\ud83d\udc49\ud83c\udffd Pour the cookies into a baking sheet with parchment paper.<br>\ud83d\udc49\ud83c\udffd Bake at 350F for 12-15 minutes.<br>\ud83d\udc49\ud83c\udffd Let it cool on the sheets for 5 minutes, then transfer to a cooling rack to let it cool the rest of the way.<\/p>\n\n\n\n<p>\ud83c\udf65 VEGAN ICING:<br>\ud83c\udf65 one part of raw cacao butter;<br>\ud83c\udf65 one part of coconut butter;<br>\ud83c\udf65 erythritol or monk fruit to taste (0 cal);<br>\ud83d\udc49\ud83c\udffd Melt the butters in a double boiler pan and add the sugar.<br>\ud83d\udc49\ud83c\udffd Beat with a fork or hand mixer to make the icing a bit thicker and fluffy. If is too thin, put it in the freezer just for a few minutes and then beat again.<br>\ud83d\udc49\ud83c\udffd When it starts to harden, put it back in the double boiler just enough to soften it up butter);<br>\ud83e\udd6e 1\/2 cup maple butter or syrup;<br>\ud83e\udd6e 2 tsp of each: cinnamon, ginger, nutmeg;<br>\ud83e\udd6e 1 tsp of ground cloves;<\/p>\n\n\n\n<p>\ud83d\udc49\ud83c\udffd CRUST:<br>\ud83d\udc49\ud83c\udffd Line an 7\u201d or 8\u201d Removable Bottom Round Cake tin with baking paper;<br>\ud83d\udc49\ud83c\udffd Place the cookies into your blender. Pulse until crumbly, but not too fine.<br>\ud83d\udc49\ud83c\udffd Melt the gingerbread butter with cacao butter or coconut oil.<br>\ud83d\udc49\ud83c\udffd In a medium size bowl, add in the ground cookies and pour over the melted butter and mix until texture is like wet sand.<br>\ud83d\udc49\ud83c\udffd Press the mixture into the lined mould compacting it using a spoon or clean hands.<br>\ud83d\udc49\ud83c\udffd Place in the freezer until the filling is ready.<br>\ud83d\udc49\ud83c\udffd CHEESECAKE:<br>\ud83d\udc49\ud83c\udffd Drain the cashew nuts and place them in the blender with the coconut milk, the gingerbread spread, protein (if using), and melted cacao butter or coconut oil.<br>\ud83d\udc49\ud83c\udffd On high speed, blend for around 5 minutes until smooth.<br>\ud83d\udc49\ud83c\udffd Pour the filling into the base, and place back into the freezer to set for a minimum of 4-6 Hours, then transfer to the refrigerator until ready to
